Rebecca Henry, who’s quickly become one of my favorite authors, has done it again with the second installment of her fantastic, best-selling vegan cookbook series, A VERY VEGAN CHRISTMAS: MRS. CLAUS’ KITCHEN. I thought she’d outdone herself with the delicious recipes in her Halloween cookbook. But then Rebecca somehow managed to produce even more creative, tasty dishes, all centered around Christmastime (which is my favorite season of the year).
Speaking of favorites, breakfast is my absolute fave meal of the day. So when I saw that this cookbook offers up yummy, healthy creations such as Snowman Pancakes, Christmas Morning Crepes, Good Tidings French Toast, etc., I was ecstatic. I also have a serious sweet tooth, so I was pleased as punch with the yummy cookie, cupcake, and pie recipes. And then there’s my mother, who loves carbs but is a diabetic. Rebecca’s fruit, bread, and cracker recipes are perfect for her as the grams of sugar are low and there are no harmful additives and preservatives.
The best thing about this cruelty-free cookbook, however, is Rebecca’s loving effort to bond families and friends while making wonderful memories in the kitchen and beyond. Her festive, easy-to-follow creations, which are presented beautifully in photos throughout the book, will undoubtedly do just that!

Rebecca Henry is a world traveler living abroad in England. Besides being an author, Rebecca is also a podcast talk host on the show The Latte Talk. The podcast was inspired by her latest novel, Louisiana Latte and her diva sister Deb. She is a serious vegan, gardener, crafter, wife and mom who practices yoga. She loves to laugh, her drug of choice and loves all things witchy with a hint of the macabre. Her favorite holiday is Halloween and her favorite movie of all time is Practical Magic.
